Biking is great in this area. There's a great spot in town called the Bike and Bean/Ellicottville Bike Shop - Dennis is the owner. You can pick up maps for $10 there (the cost supports the shops and trails).
Holiday Valley provides entry level mountain bike rentals and is the only option for rentals in the area. The maps suggest Allegany for some beginner dirt, Golden Hill for intermediate to challenging dirt. There are some beginner options on McCarty Hill behind Holiday Valley, but you'd have to climb from Holiday Valley or drive there. You can also take the bike to Allegany State Park for a paved ride through nature at its finest
