Go to any local party and you’ll often see a small wheel of cheese that on the surface looks like brie. Inside, the triple cream cheese is hands down the best soft cheese I have ever had. Every time I see cheese maker Will, I ask him “What makes your cheese taste so good?” He’ll insist that it is the Jersey cream from a local family dairy farm but I suspect it is the way he makes it. They have a self-serve store at their location at 473 State Route 43 in Stephentown (usually open M-Th 10-4) or at the New Lebanon farmer’s market on. You can purchase their cheese there for $10 a wheel. Don’t worry if you can’t make those hours; you can also find it at the Old Chatham Country Store which is just 4 miles away. If you wait until you get back to the city, you may be paying (if you can find it) $25 or more. They are now making ricotta.
